I don’t know about all of you out there but for us date nights have been a little mundane and way to predictable. Going out to dinner is wonderful but there is so much more fun to be had than enjoying a good meal together. This past Saturday we decided to mix it up and do something different. I suggested 3 options; downhill skiing, snowboarding and snowtubing. Mike was shocked and thought I had lost my mind. (He’s not crazy about the cold and neither am I but I thought we needed some fresh air.) But as the day progressed and he knew that I was serious I think he warmed up to the idea of doing something more adventurous, out of the norm. So Saturday at 4:00pm we set out to Buck Hill and had loads of fun. We laughed and screamed all the way down the hill. We tried to imagine that we were on the zip line in Cabo as we were getting towed up the hill. We decided to take a few photo’s to capture the memory and have as proof for those who’d never believe it. My husband has a great sense of humor. As we were paying the ticket guy he said that he wanted to pay for 15 minutes worth. We were standing next to a family that had facemasks to protect their faces and I said honey, we need some of those. To which he replied, I need more than that, I need a plastic bubble with a heater. We did make it down the hill more than a few times.  Now we have great ideas of other adventures we’d like to try next. It’s great to step out of the norm and do something wild. Okay it may not be wild for some of you but for us it was wild. We are getting older, the body does’t bounce back the way it used to.

Okay, so it’s well below zero in Minnesota and I have been feeling a bit cooped up. It’s so cold that when you go outside and breath in the air you cough because it chokes you. Justin Taylor mentioned on his blog the facinating sensation of your nose hairs freezing when you go outside in this wheather, it’s true. So when it’s cold I jump into cooking mode. It’s way more exciting than tackeling my laundry pile. So yesterday the kids and I made the best cookies I have ever had, except for my great grandma Musseman’s snickerdoodle’s. They are Monster Cookies and loaded with sugar goodness. I am sure I have gained a few pounds just from making them yesterday but it’s well worth it.

Monster Cookies

3 eggs

1 1/4 c. light brown sugar

1 c. sugar

1/2 tsp. salt

1/2 tsp. vanilla

1 stick of butter

1 (12 ounce) jar peanut butter

1/2 c. M&M’s

1/2 c. chocolate chips

1/4 c. raisins

2 tsp. baking soda

4 1/2 c. oatmeal (quick cooking)

Bake at 350 for about 8-10 minutes

Joshua our 3 year old says funny things all the time. What 3 year old doesn’t? Here are a few from these past few weeks.

Over Christmas vacation our family went out for breakfast at Original Pancake House. We were praying in the car on the way there. That means we each take a turn. It was snowing at the time. When it was Joshua’s turn to pray he said, “Dear Lord Jesus, thank you for this beautiful day and thank you that there are no mosquitos out today…” Mike and I just laughed and thought to ourselves, how true that is. Funny thing is we hadn’t mentioned or even thought of mosquitos in months, how did that little mind get to thinking about those pesky bugs anyway? He reminded us that there is always something to be thankful for.

This past week Greta and Caleb are back at school. One afternoon after picking them up they were arguing about something in the back of the car or pushing each others buttons. So I mentioned that if they did not stop they were going to have to have a “timeout” when we got home. Joshua immediatley added, “And a spanking to go with it!”

Today Joshua and I were on the early side of picking up the kids from school so we had some time to kill. I told him we were going to stop by Walgreens first . As we pulled up to park he said, “But Walgreens is NOT green.”
