I enjoy cooking. Many of my friends and I joke about how we love to climb into bed at night and look through our cookbooks or latest cooking magazines. Mike often finds it very amusing, how I can get so excited about a new recipe. Here is a favorite of mine for all of you out there who enjoying cooking. It’s from my Smith and Hawken’s Cookbook. I stumbled across it years ago in looking for a Vegetarian dish for one of my sister’s. It’s great and my family loves it. Enjoy!
Pasta and Vegetable Torta
3/4 pounds of angel hair pasta
3 TBSP. olive oil
1 medium carrot, finely chopped
2 small summer squash, trimmed and finely chopped
1 medium red bell pepper, finely chopped
4 green onions (scallions), sliced
2 garlic cloves, minced
1TSP. salt
1/2 TSP. black pepper
3 large eggs
2 cups heavy (whipping) cream
1 cup grated Parmesan cheese
Preheat oven to 350 degrees
Boil water and cook pasta until limp but not fully done (set aside)
Saute Vegetables, in olive oil, add garlc, salt and pepper (just until slightly soft)
Whisk eggs, cream and cheese in a large bowl, add cooked vegetables and pasta. Transfer into a 10×8 inch baking dish. Bake for 40 minutes, until top is slightly springy. Serve right away.
